Mango Marshmallow Cookie Sandwiches

Ingredients

8 marshmallows
1 large mango, peeled, pitted and sliced
8 (3-inch) soft molasses cookies

Method

Turn the marshmallows on metal skewers over hot coals until the outsides are golden and the centers soften.
Place two marshmallows on each of four cookies, add mango slices and close with the remaining cookies. Serve while the filling is warm.
