Ingredients

  • Crisps: 5 ounces water
  • Crisps: 3 ounces sugar
  • Crisps: 1 ounce tamarind puree
  • Crisps: 3 grams agar agar
  • Crisps: pinch of salt
  • Crisps: ½ ounce egg white
  • Jam: 1 large ripe mango, peeled and diced
  • Jam: 4 ounces sugar, divided
  • Jam: ½ Serrano chile, finely diced
  • Jam: 1 teaspoon pectin
  • Crumble: 2 ounces all-purpose flour
  • Crumble: 1 ounce butter
  • Crumble: 2½ ounces sugar
  • Crumble: pinch of salt
  • Risotto: 12 ounces arborio rice
  • Risotto: 5 cups water, plus extra if needed
  • Risotto: ¼ cup extra virgin coconut oil
  • Risotto: ¼ cup coconut butter
  • Risotto: 1 cup coconut milk
  • 1 large ripe mango, peeled and sliced into ribbons
  • Thinly sliced makrut lime leaves for garnish

Method

  1. Blend the crisp water, sugar, tamarind, agar and salt. Bring to a boil while stirring, transfer to a dish and chill about 1 hour until set.
  2. Blend the gel with egg white. Spread very thinly on parchment or a silicone mat. Bake at 200°F for 40–60 minutes until crisp, cool and break into pieces.
  3. For the jam, bring mango, serrano and 3 ounces sugar to a boil while stirring. Add the remaining 1 ounce sugar and pectin; cook on low for 4 minutes, then chill.
  4. Pulse the crumble flour, butter, sugar and salt together. Bake at 325°F about 15 minutes, stirring halfway, until golden.
  5. Lightly toast rice in coconut oil over medium-low heat. Add water in small amounts, stirring and allowing absorption between additions, until tender.
  6. Stir in coconut milk and coconut butter. Divide the risotto, add mango ribbons and crumble, and finish with tamarind crisps, makrut lime and small spoonfuls of jam.
