- 3 large mangos, peeled, pitted and coarsely chopped or 6 cups frozen mango chunks
- ½ tsp organic molasses
- ½ tsp garlic powder
- ¼ tsp ginger powder
- 1 tbsp avocado oil
- ⅓ cup coconut sugar
- ¼ tsp fish sauce
- ½ tsp onion powder
- 1 tbsp chili paste
- ½ tsp red pepper flakes
- 2 lbs chicken wings (about 24), wingtips removed, or drumettes patted dry
- Chopped scallions, for garnish
- Kosher salt and freshly ground black pepper
Method
- Blend mango, molasses, garlic, ginger, oil, sugar, fish sauce, onion powder and both chiles. Set aside ½ cup for marinating and keep the remainder away from raw chicken.
- Season wings, coat with the ½ cup sauce and refrigerate for 30–60 minutes.
- Boil the clean reserved sauce for 5 minutes, stirring to prevent sticking.
- Grill wings, turning, until they reach 165°F. Toss with ¼ cup cooked sauce and serve with scallions and the remaining sauce on the side.
