Ingredients

  • 2 ounces unsweetened chocolate
  • ½ cup whole-wheat flour
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup olive oil
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 cup walnuts
  • 1 ripe mango, peeled and diced, divided
  • Nonstick baking spray with flour for the pan

Method

  1. Melt the chocolate over a water bath and let it cool slightly. Combine the flour, cinnamon and salt separately.
  2. Whisk the oil with both extracts. Add the sugar, then the eggs one at a time, followed by the cooled melted chocolate.
  3. Fold in the dry ingredients just until combined, then add the walnuts and half the mango.
  4. Heat the oven to 350°F and grease an 8-inch square pan. Spread in the batter and scatter the remaining mango on top.
  5. Bake for 40 minutes, until a toothpick comes out clean. Cool completely before cutting into 16 squares.
